Chargrills: Mexi Bowls but fod-friendly

It’s still cold again. You know where it’s still NOT cold? Mexico. Let’s pretend we’re there again.
But this time we have a sensitive tummy. Sand between toes, Trump caps everywhere. The
sound of breaking waves but no rumbly, gassy tummy. Just hunger. Perfect. That’s the
FOD-friendly stuff. Serve with a chilli marg.
 
Two large chicken breasts
Garlic infused cold pressed olive oil
Paprika
Mixed herbs
Chilli flakes
Cumin
Any spices in your pantry except cinnamon lol
½ -1 cup cooked rice per person
1 orange kumara, roasted in bite sized pieces
Two carrots (yes Karen, they’re ribboned)
Edamame beans (cheap!) 
Canned corn, charred without oil
Feta or cheese on top
 
Last week we did Mexi bowls. This week we are doing FOD-friendly Mexi bowls. Some
people have sensitivities to certain foods which requires them to go on a FOD-friendly diet.
This is it boys and girls. FOD-friendly Mexican doesn’t have to be bland and boring.
To prepare the chicken, cut it into small chunks and rub with spices. Then cook it on medium heat in cold-pressed olive oil. Garlic infused is boujee but low fodmap diets avoid garlic so this is a way to slip it in there. Once cooked, set aside. 
 
Add cooked rice into a bowl. Top with chicken, roasted kumara, carrot, edamame beans,
charred corn and add cheese on top. For the edamame: place in warm water until soft. Strain and serve. Tuck in FODDYS.
