Price: $$
Difficulty: 2.5/5

250g Whittakers dark chocolate (scribble note: feel free to pinch a couple of squares for “quality testing”)
300mL cream
4 eggs (separated into yolks and whites)
3 Tbsp white sugar

Whipped cream
Shaved chocolate
Chopped nuts
Anything else that gets you in the mood ;)

  1. Whip the cream to stiff peaks and set aside.
  2. Set up a double boiler to melt your chocolate. Do this by pouring a few centimetres of water into a pot and bringing to a simmer. Place a snug fitting glass or stainless steel bowl on top of the pot. Place chocolate into the bowl and stir until completely melted, then set aside to cool slightly.
  3. Once the chocolate has cooled, beat in with the egg yolks thoroughly until smooth and glossy.
  4. Fold the chocolate mix into the whipped cream. Be careful not to mix too much as we want to keep the mousse fluffy and aerated.
  5. In a separate bowl beat your egg whites to stiff peaks while slowly adding the sugar.
  6. Once beaten, fold half of the egg whites into the chocolate and cream mixture. Once combined, fold in the second half of the egg white.
  7. Place the mousse into the fridge and cool for at least two hours until serving.
  8. Enjoy with as many sexy toppings as you desire!
